Supper Fried Chicken
ca. 1,5
Kilo frische Hühnerteile ( Brust, geviertelt, und Keulen )
Zutaten
für 4
Portionen:
1 l Buttermilch / 200 g Mehl /
je 2 TL Knoblauchsalz und Paprika / Salz, Pfeffer / Öl zum Braten
Die Hühnerteile in einer großen
(!) Schüssel mit gesalzenem kalten Wasser bedecken und ca. drei Stunden
in den Kühlschrank stellen. Danach abgießen und Buttermilch über die Hühnerteile
gießen, abdecken und mindestens acht Stunden ( besser über Nacht ! )
marinieren lassen. Danach Buttermilch abgießen und entsorgen. Der
Backofen muß auf 175° vorgeheizt und das Mehl mit den Gewürzen vermischt
werden. Die Hühnerteile gut darin wenden und mit Salz und Pfeffer würzen.
Das Öl in einer Pfanne erhitzen und die Hühnerteile portionsweise von
jeder Seite zwei bis vier Minuten hellbraun braten und in eine große
ofenfeste Form legen. Danach in der Form im Ofen ca 35 bis 45 Minuten
nachgaren.

Buttermilk
Biscuits
Zutaten:
ca. 200 g Mehl / ca. 50g
Maismehl / 1 TL Salz / 2 TL Zucker / 1/2 Paket Backpulver / Messerspitze
Natron / ca. 65 g Butter / ca.
200 ml
Buttermilch
Die trockene Zutaten in einer
Schüssel vermischen und Fett mit einem Messer untermischen. Danach die
Buttermilch hinzugeben und zu einem glatten Teig verkneten ( Hier ist
etwas Eile geboten ). Muffin - Formen einfetten und mit etwas Maismehl
ausstreuen. Nun den Teig einfüllen bis etwa 2/3 der Höhe einfüllen und
bei 220 Grad ca. zehn Minuten backen.
Diese Biscuits sind in
den USA eine beliebte Beilage zu "Fried Chicken" mit Cole
Slaw.

Zutaten
für 4 Portionen:
1
Tasse Mayonaise / 3 EL Essig / 3 EL Zucker / 2
EL Milch / Salz, Pfeffer / 1 Weißkohl ( fein gehackt ) / ca. 3 Möhren (
fein gehackt )
Die Zutaten
gut verrühren, den Kohl und die Möhren dazugeben, gut mischen,
abschmecken und ca. 24 Stunden ziehen lassen. |
Gegrillter
Mais - Corn on the Cob
Zutaten
für 3 - 4 Maiskolben:
ca.
50 g weiche Butter / 1
Prise Salz & Pfeffer und 3
- 4 Zuckermaiskolben
Die
Butter leicht salzen und pfeffern. Die Maiskolben damit bestreichen und in
Alufolie wickeln und die Kolben am Rand des Grills ca. 1/2 Stunde
mitgrillen. |

Huhn ( oder Garnelen ! )
auf kreolische Art Herkunft: Louisiana
Zutaten für 4 - 6 Portionen:
5 Hähnchenschnitzel ohne Haut und Knochen / 1 EL Mehl
/ 1 TL Salz / 1/4 TL getr. Thymian / 1/2 TL getr. Oregano / 1/2 TL getr.
Basilikum / 1/2 TL Paprikapulver / 1/8 TL Cayennepfeffer / 1/8 TL schwarzer
Pfeffer / 1/8 TL weißer Pfeffer / 4 EL Pflanzenöl / ca. 100 g geh. Zwiebeln
/ ca. 100 g grüne, geh. Paprika / ca. 100 g geh. Stangensellerie / 2 feingeh.
Knoblauchzehen / 750 ml Hühnerbrühe / ca. 550 g frische, entkernte, geh.
Tomaten / 225 g Tomatensauce aus dem Glas / 1 TL Zucker / einige Tropfen
Tabasco Sauce / 15 g frische, geh. Petersilie / 75 g geh. Lauchzwiebeln /
550 g gek. Reis
Das Fleisch in mundgerechte Stücke schneiden. Mehl und
Gewürze in einer Schüssel mischen und das Fleisch darin wenden bis es
gleichmäßig bedeckt ist. 2 EL Öl in einer Pfanne erhitzen und das Fleisch
darin anbräunen und ca. 10 Min. garen ( bis es durch ist ). Danach aus der
Pfanne entnehmen und beiseite stellen. Nun in der Pfanne Zwiebeln, Paprika,
Sellerie und Knoblauch ca. 5 Min. braten. ( Falls erforderlich noch etwas Öl
hinzugeben ) Nun in einem großen Topf die Hühnerbrühe kochen und das
Fleisch, das gebratene Gemüse, Tomaten, Tomatensauce und Zucker hinzu geben.
Bei geschlossenem Deckel ca. 45 Min. bei niedriger Temperatur unter
gelegentlichem Umrühren köcheln lassen. Danach mit Tabasco und Salz
abschmecken. Erst vor dem Servieren die Petersilie und die Lauchzwiebeln
einrühren.
Auf Reis, in tiefen Tellern servieren !
Dieses Gericht schmeckt ebenfalls sehr köstlich mit
Garnelen ! Bei dieser Version wird das traditionelle Rezept, für das
Hühnchenteile zuerst bei niedriger Temperatur gekocht werden, um die
Hühnerbrühe selbst herzustellen, ein wenig verkürzt. Die Brühe kann
natürlich auch selbst hergestellt werden. |
Maisbrot
- Corn Bread
Zutaten:
1
Ei / ca.
250 ml Milch / ca. 50 g
geschmolzene Butter / ca. 100 g Maismehl / ca. 150 g Mehl / 1/2 TL Salz /
2 EL Zucker / 2 TL Backpulver
Das Ei in einer Schüssel
verschlagen, Milch und Butter dazugeben und verrühren. In einer anderen
Schüssel die trockenen Zutaten vermischen, die Flüssigkeit dazugeben und
kurz umrühren. Den Teig in eine Kastenform geben und ca. 25 Minuten bei
200 Grad backen. Danach abkühlen lassen und das Brot in Quadrate
schneiden.

Zutaten
für ca. 6 Portionen:
2 Tassen Maismehl / 1 Tasse
Weizenmehl / 1 TL Backpulver / 1 TL Salz / 1/2 TL Natron / 2 Eier / ca.
225 ml Buttermilch / Frittierfett
Eier
und Buttermilch verrühren. Die trockenen Zutaten in einer separaten Schüssel
mischen und die Milchmischung unter ständigem Rühren dazugeben. Diesen
Teig zu Bällchen formen und diese Bällchen bei ca. 200 Grad im Frittierfett
erhitzen bis sie goldbraun sind. Sofort servieren ! Durch
individuelle Zugabe von z. B. Knoblauch, Pfeffer oder Zwiebeln sind die
Hush Puppies beliebig variierbar.
Passen
hervorragend zu Geflügel und Fisch ! |
Meat & Potato Pie
Ingredients
3 Tablespoons oil
3 cups shredded hash browns
1 cup grated Swiss or Cheddar cheese
3/4 cup diced ham, sausage or chicken
1/4 cup chopped onion
1 cup evaporated milk or whole milk
2 eggs
1/2 teaspoon salt
1/8 (or dash) pepper
sprinkle of herb mix or parsley
Description
Mix potatoes and oil in a 9 inch pie plate. Press into a crust. Bake at
425° for 15 minutes. Layer cheese, meat and onion. Combine milk, eggs
and seasoning. Pour over the top. Bake at 425° for 30 minutes. Cool 5
minutes before cutting. |

Mexican Shrimp Dip
Ingredients
3 ounces cream cheese
6 Tablespoons salsa, divided
½ cup cocktail sauce
3 cans (6 oz) small shrimp, rinsed and drained (or 1 pound fresh shrimp
boiled and chopped)
1 can (2¼ oz)sliced ripe olives, drained
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
sliced green onions
Description
Combine cream cheese and 3 Tbs salsa, spread into ungreased 9 inch pie
plate. Combine cocktail sauce and remaining salsa, spread over cream
cheese. Layer the other ingredients. Top with green onion slices. Serve
with chips and crackers.

Pecan Sour Cream Waffles
Ingredients for 1 dozen waffles
2 large eggs, separated
1 cup sour cream
1 cup all purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup finely chopped pecans
Description
In a mixing bowl, beat the eggs well, then add the sour cream and blend
throughly. In another bowl,whisk the egg whites till stiff peaks form
and fold into the sour cream mixture. Fold in the flour, baking powder,
salt, and pecans and stir till well blended and smooth.
Pour the mixture into a hot waffle iron about one third full, cover, and
cook till the waffles are browned and crisp. |

Stuffed Bell Peppers
Ingredients
6 green peppers
1 pound ground beef
1 medium onion, chopped
16 ounce can whole tomatoes, drained and chopped
½ cup water
½ cup rice
½ teaspoon salt
1 teaspoon Worcestershire sauce
5 ounces shredded sharp cheddar cheese
Description
Cut off the tops of peppers, remove seeds and membranes. Boil peppers
for five minutes. Remove from water and drain.
Cook ground beef and onion until lightly browned. Drain fat. Stir in
tomatoes, water, rice, salt, pepper and Worcestershire, bring to a
simmer, cover and cook about 20 minutes, until rice is tender. Stir in 4
ounces of the cheese and mix until blended.
Stuff peppers with equal amounts of mixture. Sprinkle with rest of
cheese. Bake in 350° for 20-25 minutes. |
Real Southern Fried Chicken
Ingredients for 4
One cut up fryer (Two for real hungry folks)
1 c. White Lily flour
salt and black pepper to taste
lard (not the store bought stuff with preservatives)
Description
Put a "right smart" of lard (as my grandpa used to say) in an iron
skillet. It should be about an inch deep when melted. Get lard really
hot.
Meanwhile, coat chicken pieces in flour, which has been generously
seasoned with salt and black pepper.

Chicken and Wild Rice
Casserole Ingredients
2 chicken breasts
1 box Uncle Ben's Wild Rice
1/2 cup chopped onion
1/2 cup chopped celery
1 cup mayonaisse
1 can cream of chicken soup
small jar of pimento
can of water chestnuts
can of french style green beans
Description
Boil chicken breasts - reserve the stock. Prepare the wild rice using
instructions on box but substitute chicken stock for water. Add onions
and celery for the last 15 minutes of cooking. Chop or shred the chicken.
Mix all ingredients in a casserole and bake at 350° for 30 minutes.
Notes
You can lower the calories and fat by using low-fat mayo and chicken
soup.
If you like to cook ahead and freeze dinners, try this:
Cook six or more chicken breasts at once. Chop the meat and store it in
freezer bags (2 breasts per bag). Freeze chicken stock with onion and
celery aready chopped in it. When you need a quick meal, most of the
work is done! |
Chicken and Broccoli
Ingredients
1 package frozen broccoli spears (thawed)
3 - 4 chicken breasts
2 cans cream of chicken soup
¼ cup mayonnaise (with lemon juice)
6 slices American cheese
1 cup shredded cheddar cheese
1 tube Ritz crackers (crushed)
¼ cup melted margarine
Description
Cook chicken, cut into cubes or shred. Microwave broccoli for 2
minutes.Put chicken and broccoli in baking dish. Mix soup and mayo, pour
over broccoli and chicken. Cover with American cheese,then Cheddar.
Sprinkle with Ritz crumbs, then pour melted margarine over crumbs to
moisten. Bake at 350° for 30 minutes. |

Southern Peanut Soup (
quick method ) Ingredients for 3
to 4 folks
1 can chicken broth (about 1.75 cups)
1 to 1.5 cups creamy peanut butter
Cream or milk about 3/4 cup or so according to desires
crushed peanuts (salted, plain, or honey roasted)
Toast points (1 slice of bread per person)
(alternative home made or store bought croutons)
onion salt
Description
This is just about identical in taste to what you would get in
Williamsburg or by doing it "from scratch". Goes as a nice first course
for a dinner, or as lunch all on it's own. It is VERY rich and filling.
Notes
Heat up the chicken broth bringing it just to boil then lowering to
medium. Add the peanut butter and stir until completely
disolved and incorporated. Use your judgement here. It should be thick
and creamy. You can add more peanut butter or water to thicken it or
thin it, but bear in mind that you will be adding cream or milk also.
Should be on the thick side before addition of the cream. Add the cream
or milk to make it about like you'd see in any cream of whatever kinda
soup.
Then add the onion salt and stir.
Make the toast points by toasting the bread, then putting in the oven to
dry a little more. Cut in triangles by cuttin on bias across bread in an
X from each of the four points.
Just before serving, add the crushed peanuts on top of each bowlful and
have a separate bowl for whatever is left to allow folks to add more if
they wish. You just want to dust the top of each serving with the
crushed peanuts. Serve each person one piece of toasted points of four
triangles. |
